Cajun Fish

Ingredients

  • 2 tablespoons reduced-calorie margarine, melted
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 1 teaspoon black pepper
  • 1 teaspoon ground red pepper
  • 1/2 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 4 (4-ounce) farm-raised catfish fillets/tilapia
  • Vegetable cooking spray

Method:

  • Combine the first 8 ingredients in a large bowl.
  • Brush the pieces of fish with margarine mixture.
  • Place fish on rack of a broiler pan coated with cooking spray. 
  • Broil 5 1/2 inches from heat 8-10 minutes or until fish flakes easily when tested with a fork and the top is slightly blackened.
  • Serve on a bed of hot rice or Romaine lettuce.
