Cajun Fish
Ingredients

2 tablespoons
reduced-calorie margarine, melted

1 teaspoon
dried basil

1 teaspoon
dried thyme

1 teaspoon
paprika

1 teaspoon
black pepper

1 teaspoon
ground red pepper

1/2 teaspoon
salt

1/8 teaspoon
garlic powder

(4-ounce) farm-raised catfish fillets/tilapia

Vegetable cooking spray
Method:
- Combine the first 8 ingredients in a large bowl.
- Brush the pieces of
fish with margarine mixture.
- Place fish on rack of a broiler pan coated with cooking spray.
- Broil 5 1/2 inches from heat 8-10 minutes or until fish flakes
easily when tested with a fork and the top is slightly blackened.
- Serve on a bed of hot rice or Romaine lettuce.
